It's a little cooler, it's raining outside and there's a longing for yummy baked goods! So here's some muffins I just whipped up.
A really easy recipe that you can tweak and add to as you like.
1 teaspoon baking powder
1 1/4 cup Flax + Almond baking meal
3/4 cup protein powder (flavour of your choice*)
3 tablespoons natural yoghurt (full fat, low fat, no fat, cocoyo - it all works! )
1 teaspoon organic vanilla extract
1/2 - 1 cup Milk or nut mylk of your choice (enough to get the batter to the consistency of cake batter)
Preheat oven to 180C.
Grease your muffin tin.
Mix all ingredients together except the milk.
Add milk a splash at a time, until you have reached the consistency of cake batter.
Pour batter into muffin tins.
Bake for about 10-15 minutes depending on your oven. Muffins are cooked when they bounce back when pressed.
* I used chocolate Sun Warrior Brown Rice vegan protein. But any protein will do just fine!
I also added 50ml espresso to my mix for mocha muffins!
This is a basic mix that you can mix up by adding nuts or fruit or changing your protein flavour!
